- 1/2 red onion, finely sliced
- 1 red pepper, deseeded and cut into thin strips
- 1 yellow pepper, deseeded and cut into thin strips
- 200g cherry tomatoes, halved
- 200g halloumi cheese, sliced into 1cm thick slices
- Heat a griddle pan until hot.
- Add the halloumi slices and cook for 2 minutes on each side until golden.
- Add the peppers and onion to the pan and cook for 3-4 minutes until softened.
- Remove from the heat and transfer to a large bowl.
- Add the cherry tomatoes to the bowl and toss together with the other ingredients.
- Serve on a bed of salad leaves or with crusty bread.
