Ingredients
  • 1/2 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh oregano leaves
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 18 ounces halloumi cheese, cut into 1-inch cubes
  • 3 cups cubed seedless watermelon

Steps
  1. In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt and pepper. Place the halloumi cubes in a shallow dish and pour the marinade over top. Cover and refrigerate for at least 30 minutes.
  2. Preheat an outdoor grill to medium-high heat.
  3. Thread the halloumi cubes and watermelon cubes onto skewers. Grill for 4 to 5 minutes per side or until lightly charred.
  4. Serve warm.
