- 1/2 cup olive oil
- 1/4 cup fresh lime juice
- 2 tablespoons honey
- 1 tablespoon garlic, minced
- 1 teaspoon ground cumin
- Salt and freshly ground black pepper, to taste
- 2 cups cubed halloumi cheese
- 2 cups cubed seedless watermelon
- In a small bowl, whisk together olive oil, lime juice, honey, garlic and cumin. Season with salt and pepper, to taste.
- Thread halloumi cheese and watermelon onto skewers. Brush with olive oil mixture.
- Heat a grill pan over medium-high heat. Add kebabs and cook until lightly charred on all sides.
- Serve immediately.
