Preheat the grill to medium-high heat. Brush the halibut fillets with olive oil and season with salt and pepper.
Place the fish on the preheated grill and cook for 4 minutes. Flip the fish over and cook for an additional 4 minutes.
Remove from the grill and set aside. In a small saucepan, combine the white wine, butter, and lemon juice. Simmer over medium heat until the sauce thickens slightly.
Serve the grilled halibut topped with the white wine sauce.
