- 2 zucchini, sliced in half lengthwise
- 1 red onion, cut into wedges
- 1 red bell pepper, cut into large pieces
- 1 yellow bell pepper, cut into large pieces
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Preheat your grill to medium heat.
- Brush the vegetables with olive oil and season with garlic, oregano, salt and pepper.
- Place the vegetables on the preheated grill and cook for 8-10 minutes, turning once or twice until they are tender.
- Serve hot.
