- 1 large eggplant
- 3 cloves garlic, minced
- 3 tablespoons olive oil
- 2 tablespoons chopped fresh herbs (such as oregano, basil, thyme, or rosemary)
- Salt and freshly ground black pepper
- Preheat a grill to medium-high heat.
- Cut the eggplant into 1/2-inch thick rounds.
- In a small bowl, mix together the garlic, olive oil, herbs and season with salt and pepper.
- Brush both sides of the eggplant slices with the garlic mixture.
- Grill for 3-4 minutes per side or until nicely charred and cooked through.
- Serve warm.
