Ingredients
  • 1 large eggplant
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 2 tablespoons chopped fresh herbs (such as oregano, basil, thyme, or rosemary)
  • Salt and freshly ground black pepper

Steps
  1. Preheat a grill to medium-high heat.
  2. Cut the eggplant into 1/2-inch thick rounds.
  3. In a small bowl, mix together the garlic, olive oil, herbs and season with salt and pepper.
  4. Brush both sides of the eggplant slices with the garlic mixture.
  5. Grill for 3-4 minutes per side or until nicely charred and cooked through.
  6. Serve warm.
