- 1 eggplant, cut into 1/4 inch slices
- 1/4 cup olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 hamburger buns
- 2 tablespoons butter, melted
- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- In a large bowl, mix together the olive oil, garlic powder, salt and pepper.
- Brush eggplant slices with the mixture on both sides.
- Grill eggplant slices for 3 to 4 minutes per side, or until tender.
- Brush hamburger buns with melted butter and toast lightly on the grill.
- Assemble sandwiches with eggplant slices and serve.
