Ingredients
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 medium eggplants, sliced into 1/4-inch rounds

Steps
  1. Preheat the grill to medium-high heat.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, garlic, salt and pepper.
  3. Brush both sides of the eggplant slices with the oil mixture.
  4. Grill for 4-5 minutes on each side until lightly charred and tender.
  5. Remove from the grill and let cool.
  6. Arrange the eggplant slices on a platter and drizzle with remaining oil mixture. Serve warm or at room temperature.
