Grilled Eggplant …
Ingredients
  • 1 large eggplant
  • 1/2 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning

Steps
  1. Preheat grill to medium-high heat.
  2. Slice eggplant into 1/4 inch thick slices and brush each side with olive oil.
  3. In a shallow bowl, combine breadcrumbs, Parmesan cheese, garlic and Italian seasoning.
  4. Dip each eggplant slice into the mixture and coat both sides.
  5. Place eggplant slices on the preheated grill and cook for 3-4 minutes per side or until golden brown and tender.
  6. Serve warm with your favorite pasta sauce.
