- 1 large eggplant
- 1/2 cup Italian-style breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Preheat grill to medium-high heat.
- Slice eggplant into 1/4 inch thick slices and brush each side with olive oil.
- In a shallow bowl, combine breadcrumbs, Parmesan cheese, garlic and Italian seasoning.
- Dip each eggplant slice into the mixture and coat both sides.
- Place eggplant slices on the preheated grill and cook for 3-4 minutes per side or until golden brown and tender.
- Serve warm with your favorite pasta sauce.
