Grilled Eggplant …
Ingredients
  • 1 large eggplant, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch cubes
  • 1 yellow onion, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon sea salt
  • 1/4 teaspoon ground black pepper

Steps
  1. Preheat the grill to medium heat.
  2. In a large bowl, combine the eggplant cubes, bell pepper cubes, and onion cubes.
  3. Toss with olive oil, garlic, salt and pepper.
  4. Thread the vegetables onto skewers and place on the preheated grill.
  5. Grill for 15 to 20 minutes or until vegetables are tender and lightly charred.
  6. Serve warm.
