- 1 large eggplant, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch cubes
- 1 yellow onion, cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- Preheat the grill to medium heat.
- In a large bowl, combine the eggplant cubes, bell pepper cubes, and onion cubes.
- Toss with olive oil, garlic, salt and pepper.
- Thread the vegetables onto skewers and place on the preheated grill.
- Grill for 15 to 20 minutes or until vegetables are tender and lightly charred.
- Serve warm.
