Ingredients
  • 1 large eggplant
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Steps
  1. Cut the eggplant into 1/2 inch thick slices.
  2. Brush both sides of each slice with olive oil.
  3. Sprinkle with garlic powder, Italian seasoning, salt and pepper.
  4. Grill on medium-high heat for 3-4 minutes per side or until cooked through.
