Ingredients
  • 1/2 cup olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 ears of corn, husked and grilled
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro

Steps
  1. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  2. Cut the grilled corn off the cob and add to a large bowl.
  3. Add the avocado and cilantro to the bowl.
  4. Pour the dressing over the salad and toss until evenly coated.
  5. Serve immediately.
