Grilled Corn Avoc…
Ingredients
  • 2 ears of corn, husks removed
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 3 tablespoons fresh lime juice, divided
  • 2 avocados, pitted and diced
  • 1/4 cup chopped fresh cilantro
  • Salt and freshly ground black pepper to taste

Steps
  1. Preheat grill to medium-high heat.
  2. Brush corn with olive oil and season with garlic powder, chili powder, and 1 tablespoon of lime juice. Grill for 10 minutes, turning occasionally until lightly charred.
  3. Remove from the grill and let cool. Cut the kernels off of the cob.
  4. In a large bowl, combine grilled corn kernels, avocados, cilantro and remaining lime juice. Season with salt and pepper to taste.
  5. Serve immediately.
