- 2 boneless, skinless chicken breasts
- 1/4 cup olive oil
- Salt and pepper to taste
- 1 mango, peeled and diced
- 1/4 cup red onion, diced
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons lime juice
- Preheat grill to medium-high heat.
- Brush chicken with olive oil and season with salt and pepper.
- Grill chicken for 4 minutes per side or until cooked through.
- In a small bowl, combine mango, red onion, cilantro and lime juice.
- Serve grilled chicken with mango salsa. Enjoy!
