- 1 lb. boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Heat a large skillet over medium-high heat. Add the chicken and cook for 5 minutes on each side or until cooked through.
- Add the bell peppers and onion to the skillet and cook for 5 minutes or until softened.
- In a small bowl, whisk together the olive oil, lime juice, chili powder, cumin, salt and pepper.
- Pour the mixture over the chicken and vegetables and stir to combine.
- Cook for an additional 5 minutes or until everything is cooked through.
- Serve with warm tortillas.
