Ingredients
  • 1 lb. boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Steps
  1. Heat a large skillet over medium-high heat. Add the chicken and cook for 5 minutes on each side or until cooked through.
  2. Add the bell peppers and onion to the skillet and cook for 5 minutes or until softened.
  3. In a small bowl, whisk together the olive oil, lime juice, chili powder, cumin, salt and pepper.
  4. Pour the mixture over the chicken and vegetables and stir to combine.
  5. Cook for an additional 5 minutes or until everything is cooked through.
  6. Serve with warm tortillas.
