Ingredients
  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 flour tortillas, heated according to package instructions
  • 3 cups romaine lettuce, chopped
  • 1/2 cup Parmesan cheese, grated

Steps
  1. In a large resealable plastic bag, combine the olive oil, lemon juice, garlic, oregano, salt and pepper.
  2. Add the chicken and turn to coat. Seal the bag and refrigerate for at least 1 hour.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and discard the marinade.
  5. Grill the chicken for about 5 minutes per side or until cooked through.
  6. Let cool slightly before slicing into thin strips.
  7. To assemble the wraps: Place a tortilla on a flat surface. Top with lettuce, chicken strips and Parmesan cheese. Roll up tightly and cut in half. Serve immediately.
