Ingredients
  • 1/2 cup olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste
  • 4 boneless, skinless chicken breasts
  • 1 head romaine lettuce, chopped
  • 2 cups croutons
  • 1/2 cup freshly grated Parmesan cheese

Steps
  1. In a small bowl, whisk together the olive oil, lemon juice, garlic, mustard, salt and pepper.
  2. Place the chicken in a shallow dish and pour the marinade over it. Cover and refrigerate for at least 30 minutes.
  3. Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  4. Remove the chicken from the marinade and discard any remaining marinade. Grill the chicken for 6 to 8 minutes per side, or until cooked through.
  5. Transfer the chicken to a cutting board and let rest for 5 minutes before slicing into strips.
  6. In a large bowl, combine the lettuce, croutons and Parmesan cheese. Toss with enough of the reserved marinade to coat.
  7. Divide among 4 plates. Top each with grilled chicken strips.
  8. Serve immediately.
