- 2 tablespoons butter
- 4 slices sourdough bread
- 4 ounces mushrooms, sliced
- 4 ounces mozzarella cheese, sliced
- 2 tablespoons pesto
- Heat a large skillet over medium heat.
- Melt 1 tablespoon of butter in the skillet.
- Add the mushrooms to the skillet and cook for about 5 minutes, stirring occasionally.
- Spread the remaining butter on one side of each slice of bread.
- Place two slices of bread, buttered side down, in the pan with the mushrooms.
- Top each slice with a slice of cheese and spread 1 tablespoon of pesto on top of each slice.
- Top each sandwich with a second slice of bread, buttered side up.
- Cook until golden brown on both sides, flipping once during cooking time.
- Serve hot.
