- 2 slices of bread
- 1/2 avocado, sliced
- 1/4 cup baby spinach leaves
- 2 slices of cheese (cheddar, Swiss or other)
- butter
- Butter one side of each slice of bread.
- Place one slice, butter side down, in a skillet over medium heat.
- Layer the cheese, avocado and spinach on the bread in the skillet.
- Top with the remaining slice of bread, butter side up.
- Cook until lightly golden brown and flip over.
- Continue cooking until cheese is melted and both sides are lightly toasted.
- Serve warm.
