- 5 green tomatoes, chopped
- 1 onion, minced
- 2 cloves garlic, minced
- 1 teaspoon freshly grated ginger root
- 1 teaspoon cumin seeds
- 3/4 cup white vinegar
- 3/4 cup white sugar
- In a large saucepan over medium heat, combine the tomatoes, onion, garlic and ginger. Cook for 5 minutes stirring occasionally.
- Add the cumin seeds and cook for an additional 2 minutes.
- Stir in the vinegar and sugar. Bring to a boil and reduce heat to low. Simmer uncovered for 30 minutes stirring occasionally.
- Remove from heat and let cool before serving.
