Green Bean Salad
Ingredients
  • 1 lb fresh green beans
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard

Steps
  1. Wash green beans and trim off ends.
  2. Bring a large pot of salted water to a boil. Add the green beans and cook for 5 minutes.
  3. Drain the beans in a colander, rinse with cold water and set aside.
  4. In a small bowl, whisk together the olive oil, garlic, vinegar and mustard.
  5. In a large bowl, combine the green beans with the dressing.
  6. Toss to coat evenly. Serve chilled or at room temperature.
