Green Bean Salad …
Ingredients
  • 1 lb green beans, trimmed
  • 4 slices bacon
  • 1/4 cup chopped red onion
  • 1/2 cup crumbled blue cheese
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil

Steps
  1. Cook bacon in a large skillet over medium heat until crisp, about 8 minutes. Remove to a paper towel-lined plate.
  2. Bring a large pot of salted water to a boil. Add green beans and cook until tender, about 4 minutes. Drain and rinse with cold water.
  3. In a large bowl, combine the cooked green beans, cooked bacon, red onion, blue cheese, balsamic vinegar and olive oil. Toss to combine.
  4. Serve chilled or at room temperature.
