- 1 lb green beans, trimmed
- 4 slices bacon
- 1/4 cup chopped red onion
- 1/2 cup crumbled blue cheese
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- Cook bacon in a large skillet over medium heat until crisp, about 8 minutes. Remove to a paper towel-lined plate.
- Bring a large pot of salted water to a boil. Add green beans and cook until tender, about 4 minutes. Drain and rinse with cold water.
- In a large bowl, combine the cooked green beans, cooked bacon, red onion, blue cheese, balsamic vinegar and olive oil. Toss to combine.
- Serve chilled or at room temperature.
