- 1/2 cucumber, peeled and grated
- 1 cup plain Greek yogurt
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon lemon juice
- salt and pepper to taste
- In a bowl, combine the grated cucumber, yogurt, garlic, olive oil and lemon juice.
- Season with salt and pepper to taste.
- Mix until all ingredients are blended together.
- Refrigerate for 1 hour before serving.
