Greek Quinoa Salad
Ingredients
  • 1 cup quinoa
  • 1/2 cup diced red onion
  • 1/2 cup diced cucumber
  • 1/2 cup diced tomatoes
  • 1/4 cup crumbled feta cheese
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano

Steps
  1. Cook quinoa according to package instructions.
  2. In a large bowl, combine cooked quinoa, red onion, cucumber, tomatoes and feta cheese.
  3. In a small bowl, whisk together olive oil, lemon juice and oregano.
  4. Pour dressing over quinoa mixture and toss to combine.
  5. Serve chilled or at room temperature.
