- 1 cup quinoa
- 1/2 cup diced red onion
- 1/2 cup diced cucumber
- 1/2 cup diced tomatoes
- 1/4 cup crumbled feta cheese
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Cook quinoa according to package instructions.
- In a large bowl, combine cooked quinoa, red onion, cucumber, tomatoes and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice and oregano.
- Pour dressing over quinoa mixture and toss to combine.
- Serve chilled or at room temperature.
