- 2 pounds potatoes, peeled and cubed
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 1 teaspoon dried dill weed
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- Place the potatoes in a large pot, cover with water and bring to a boil.
- Reduce heat to low, cover and simmer for 15 minutes or until potatoes are tender.
- Drain the potatoes and transfer them to a large bowl.
- In a small bowl, whisk together the olive oil, lemon juice, dill weed, garlic powder, salt and pepper.
- Pour the dressing over the potatoes and toss gently to coat.
- Chill in refrigerator for 1 hour before serving.
