Greek Potato Sala…
Ingredients
  • 2 pounds potatoes, peeled and cubed
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 1 teaspoon dried dill weed
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Steps
  1. Place the potatoes in a large pot, cover with water and bring to a boil.
  2. Reduce heat to low, cover and simmer for 15 minutes or until potatoes are tender.
  3. Drain the potatoes and transfer them to a large bowl.
  4. In a small bowl, whisk together the olive oil, lemon juice, dill weed, garlic powder, salt and pepper.
  5. Pour the dressing over the potatoes and toss gently to coat.
  6. Chill in refrigerator for 1 hour before serving.
