- 1 cup uncooked orzo
- 2 tablespoons olive oil
- 1/4 cup finely chopped red onion
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Bring a large pot of lightly salted water to a boil. Add orzo and cook for 8-10 minutes until al dente. Drain.
- In a large bowl, combine olive oil, red onion, feta cheese, parsley, oregano, garlic powder and lemon juice. Stir in the cooked orzo.
- Season with salt and pepper to taste.
- Serve chilled or at room temperature.
