Greek Orzo Salad
Ingredients
  • 1 cup uncooked orzo
  • 2 tablespoons olive oil
  • 1/4 cup finely chopped red onion
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Steps
  1. Bring a large pot of lightly salted water to a boil. Add orzo and cook for 8-10 minutes until al dente. Drain.
  2. In a large bowl, combine olive oil, red onion, feta cheese, parsley, oregano, garlic powder and lemon juice. Stir in the cooked orzo.
  3. Season with salt and pepper to taste.
  4. Serve chilled or at room temperature.
