Gingerbread Loaf
Ingredients
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup butter, softened
  • 3/4 cup packed brown sugar
  • 2 eggs, beaten
  • 1 cup molasses

Steps
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan.
  2. In a medium bowl, sift together the flour, baking soda, cinnamon, ginger, nutmeg and salt. Set aside.
  3. In a large bowl, cream together the butter and brown sugar until smooth. Beat in the eggs one at a time, then stir in the molasses.
  4. Gradually stir the sifted ingredients into the molasses mixture. Pour into prepared pan.
  5. Bake for 60 minutes in preheated oven. Allow bread to cool in pan for 10 minutes before turning out onto a wire rack to cool completely.
