Ingredients
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups of vegetables (any combination of your favorites)

Steps
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl, combine olive oil, garlic powder, oregano, salt and pepper.
  3. Add the vegetables to the bowl and mix until they are evenly coated.
  4. Spread the vegetables in a single layer on a baking sheet.
  5. Roast in preheated oven for 25 minutes or until vegetables are tender.
  6. Serve hot.
