- 2 cups of vegetables (any combination of your favorites)
- Preheat oven to 400 degrees F (200 degrees C).
- In a large bowl, combine olive oil, garlic powder, oregano, salt and pepper.
- Add the vegetables to the bowl and mix until they are evenly coated.
- Spread the vegetables in a single layer on a baking sheet.
- Roast in preheated oven for 25 minutes or until vegetables are tender.
- Serve hot.
