- 3 lbs potatoes
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon Herbs de Provence
- Salt and pepper to taste
- Preheat oven to 400°F.
- In a large bowl, combine potatoes, olive oil, garlic, herbs de Provence, salt and pepper.
- Toss to coat potatoes.
- Spread potatoes in a single layer on a baking sheet.
- Bake for 30 minutes or until golden brown and tender.
- Serve hot.
