- 2 lbs. small potatoes, cut into quarters
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup grated parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Preheat oven to 425°F/220°C.
- In a large bowl, combine potatoes, olive oil, garlic, parmesan cheese and Italian seasoning. Toss until potatoes are evenly coated.
- Spread potatoes onto a baking sheet in an even layer.
- Bake for 25 minutes or until golden brown and crispy.
- Season with salt and pepper to taste.
