- 1/4 cup olive oil
- 3 cloves garlic, minced
- 2 tablespoons freshly grated Parmesan cheese
- 1 teaspoon dried oregano
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 2 pounds large shrimp, peeled and deveined
- In a medium bowl, whisk together the olive oil, garlic, Parmesan cheese, oregano, salt and pepper.
- Add the shrimp to the bowl and toss to coat in the marinade.
- Thread the shrimp onto skewers. Discard any remaining marinade.
- Preheat an outdoor grill to medium-high heat. Grill the shrimp skewers for 2 minutes per side or until cooked through.
- Serve immediately.
