Garlic Mayonnaise
Ingredients
  • 1 large egg yolk
  • 1 teaspoon Dijon mustard
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 teaspoon sea salt
  • 1 cup extra-virgin olive oil
  • 2 cloves garlic, minced

Steps
  1. In a medium bowl, whisk together the egg yolk, mustard, lemon juice and sea salt until well combined.
  2. Slowly add the olive oil in a thin stream while whisking continuously until the mayonnaise is thick and creamy.
  3. Stir in the minced garlic and season to taste with additional salt and pepper if desired.
  4. Refrigerate in an airtight container for up to 1 week.
