In a large bowl, dissolve the yeast in warm water. Add the sugar, olive oil, flour, salt, garlic and parsley. Stir until a soft dough forms.
Turn the dough onto a lightly floured surface and knead for 5 minutes until smooth. Place in a greased bowl and cover with plastic wrap. Let rise in a warm place for 1 hour.
Punch down the dough and divide into 12 pieces. Roll each piece into a ball and place on greased baking sheets. Cover with plastic wrap and let rise for 30 minutes.
Preheat oven to 375 degrees F (190 degrees C). Bake rolls in preheated oven for 15 to 18 minutes or until golden brown.
