- 2 zucchinis
- 1 egg
- 1/2 cup breadcrumbs
- 1/4 cup all-purpose flour
- Salt and pepper to taste
- Slice zucchinis into thin sticks.
- In a shallow bowl, whisk the egg.
- In a separate shallow bowl, mix together breadcrumbs, flour, salt and pepper.
- Dip each zucchini stick in the egg mixture then roll it in the breadcrumb mixture.
- Heat oil in a skillet over medium-high heat. Fry the zucchini sticks until golden brown on both sides.
- Remove from heat and serve hot.
