- 4 green tomatoes, sliced
- 1/2 cup all-purpose flour
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 eggs, beaten
- 3 tablespoons olive oil
- In a shallow bowl, combine the flour, garlic powder, salt and pepper.
- Dip the tomato slices in the egg mixture then dredge in the flour mixture.
- In a large skillet, heat the oil over medium-high heat. Fry tomatoes for 2 minutes on each side or until golden brown.
- Place on paper towels to drain.
- Serve warm or cold.
