Ingredients
  • 1 large eggplant
  • 1/4 cup olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 tablespoons minced garlic
  • 2 tablespoons soy sauce

Steps
  1. Cut the eggplant into 1/2-inch slices.
  2. Heat the oil in a large skillet over medium heat.
  3. Add the eggplant slices and season with salt and pepper.
  4. Cook for about 5 minutes, until lightly browned.
  5. Add the garlic and cook for 1 minute more.
  6. Stir in the soy sauce and cook for an additional 2 minutes, until eggplant is cooked through.
  7. Serve hot.
