Fried Egg Pancakes
Ingredients
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted

Steps
  1. In a medium bowl, whisk together the eggs, flour, baking powder and salt until smooth.
  2. Heat a large non-stick skillet over medium-high heat and add the butter. When the butter is melted, pour in the egg mixture and cook for about 2 minutes.
  3. Flip the pancake over and cook for an additional 2 minutes or until golden brown on both sides.
