- 1 cup corn kernels (fresh or frozen)
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 egg, beaten
- 2 tablespoons vegetable oil
- In a medium bowl, combine the corn, flour, baking powder, salt and pepper.
- Add the egg and stir until combined.
- Heat the oil in a large skillet over medium heat.
- Drop heaping spoonfuls of the batter into the hot oil. Cook for 2-3 minutes on each side until golden brown.
- Drain on paper towels and serve warm.
