Fried Corn Fritteā€¦
Ingredients
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 egg, beaten
  • 2 tablespoons vegetable oil

Steps
  1. In a medium bowl, combine the corn, flour, baking powder, salt and pepper.
  2. Add the egg and stir until combined.
  3. Heat the oil in a large skillet over medium heat.
  4. Drop heaping spoonfuls of the batter into the hot oil. Cook for 2-3 minutes on each side until golden brown.
  5. Drain on paper towels and serve warm.
