Fried Coconut Rice
Ingredients
  • 2 cups cooked white or brown rice
  • 1/4 cup desiccated coconut
  • 3 tablespoons vegetable oil
  • Salt and pepper to taste

Steps
  1. Heat a large non-stick skillet over medium heat.
  2. Add the oil and then the coconut.
  3. Stir fry for 1-2 minutes until the coconut is lightly toasted.
  4. Add the cooked rice and stir to combine.
  5. Season with salt and pepper to taste.
  6. Continue stirring until the rice is heated through and lightly browned, about 5 minutes.
  7. Serve warm.
