- 2 cups cooked white or brown rice
- 1/4 cup desiccated coconut
- 3 tablespoons vegetable oil
- Salt and pepper to taste
- Heat a large non-stick skillet over medium heat.
- Add the oil and then the coconut.
- Stir fry for 1-2 minutes until the coconut is lightly toasted.
- Add the cooked rice and stir to combine.
- Season with salt and pepper to taste.
- Continue stirring until the rice is heated through and lightly browned, about 5 minutes.
- Serve warm.
