Ingredients
  • 1 lb. fish fillets
  • 1/4 cup olive oil
  • 1 tsp. cumin
  • 1/2 tsp. chili powder
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 8-10 corn or flour tortillas

Steps
  1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  2. Place fish fillets in a shallow dish and pour olive oil over them.
  3. Sprinkle cumin, chili powder, garlic, salt, and pepper over the fish.
  4. Bake in preheated oven for 15-20 minutes or until fish flakes easily with a fork.
  5. Meanwhile, prepare mango salsa by combining diced mangoes, red onion, jalapeno, cilantro, lime juice, and salt in a medium bowl.
  6. Heat tortillas in a skillet or on the grill over medium heat for 1-2 minutes per side.
  7. Assemble tacos by filling each tortilla with cooked fish and topping with mango salsa.
