Fish Soup
Ingredients
  • 4 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 3 cups fish stock
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 potatoes, peeled and cubed
  • 2 carrots, sliced into rounds
  • 2 celery stalks, sliced into rounds
  • 1/2 teaspoon dried oregano leaves
  • 1/4 teaspoon black pepper

Steps
  1. Heat oil in a large pot over medium heat.
  2. Add onion and garlic and cook until onion is softened.
  3. Stir in paprika and cook for 1 minute.
  4. Add fish stock, tomatoes, potatoes, carrots, celery, oregano and pepper. Bring to a boil.
  5. Reduce heat to low and simmer for 20 minutes or until vegetables are tender.
  6. Serve hot.
