- 4 cod fillets
- 4 potatoes
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cold beer or club soda
- Preheat oven to 375 degrees F (190 degrees C).
- Peel and cut potatoes into 1/2 inch thick slices.
- In a medium bowl, combine the flour, baking powder, salt and pepper; stir in the beer or club soda until a thick batter is formed.
- Dip each potato slice into the batter, coating completely.
- Heat oil in a large skillet over medium-high heat.
- Fry potato slices on each side for about 2 minutes until golden brown.
- Transfer to a paper towel-lined plate to drain.
- Place fish fillets onto a greased baking sheet. Bake in preheated oven for 15 minutes or until fish flakes easily with a fork.
- Serve with chips and tartar sauce.
